Cranberry Orange Nut Pancakes
12 pancakes
2 cups biscuit baking mix
1 cup milk
2 eggs
1 tablespoon sugar
1/2 cup sweetened dried cranberries
1/2 cup chopped pecans
1 teaspoon orange zest
Butter
In a large bowl, combine biscuit baking mix, milk, eggs, and sugar. Stir in dried cranberries, pecans, and orange zest; mix until well combined.
Preheat a griddle or skillet over medium heat. Melt 1 tablespoon butter on griddle. Pour 1/4 cup batter per pancake onto hot griddle. Cook until pancakes begin to bubble and edges begin to set. Flip pancakes and cook 1 to 2 more minutes, or until golden, adding more butter as necessary.
