Turkey Pot Pie

Ingredients:
Pie dough (homemade or store bought)
1 cubed Idaho potato ( you can also throw some leftover mashed potatoes in to thicken the mixture)
1 diced onion
2-3 carrots
1 cup green beans- green bean casserole beans work here too
3-4 cups chicken stock
3 tablespoons butter
3 tablespoons flour
1/4 cup heavy cream
Salt
Pepper
Rosemary
Thyme
Diced-up turkey
Instructions:
Add butter to medium heat pan, sautee any ingredients that aren't already cooked. I would start with the onion and some salt and pepper. You are trying to cook all the veggies until slightly tender, so throw them in accordingly.
Add Rosemary and Thyme.
Add the flour. This will look funny and paste up, but that is correct, you are making a roux that will thicken your sauce.
Cook for 2-3 minutes to get rid of the raw flour taste.
Add the chicken stock a little at a time. the sauce will thicken while it heats up and you can always add more stock to loosen the mixture to where you want it to be.
Add heavy cream. (This is also where you can add left over mashed potatoes to thicken the mixture)
Add the cubed turkey, remove Thyme and Rosemary sprig and you are ready.
Place the bottom layer of the pie crust in a pie pan.
Fill the the pan with the turkey mixture.
Top with the other pie crust.
Make small cuts on top of the crust to ventilate.
Bake at 350 degrees until the top of your crust is golden brown.
