Cranberry Streuseled Sweet Potato Bake
Ingredients:
6 cups (packed down) leftover sweet potatoes- room temperature so they are soft
3 ea. large eggs
1/2 cup heavy cream
3/4 cup light brown sugar
2 TBSP maple syrup
1 TBSP vanilla
1/2 tsp ground cinnamon
pinch ground cloves
pinch ground nutmeg
2 cups cranberry sauce or relish (we make ours by simmering fresh cranberries with pure cane sugar)
2 dz. mini marshmallows
1/4 pine nuts or pecans pieces
Method:
1. Preheat oven to 350 degrees.
2. Combine all ingredients except cranberries, marshmallows, and nuts in a bowl or mixer and blend on high.
3. Taste for sweetness. You may want to add more brown sugar or maple syrup depending on how sweetened your leftover potatoes are, or your preference.
4. Using a rubber spatula, gently fold in cranberries.
5. Apply non-stick pan spray to a casserole dish, glass baking pan, or Corning ware. Spread sweet potato mixture evenly. (*If you have lots or leftovers, these will freeze well right in the pan wrapped tightly.)
6. Bake at 350 degrees for 30 minutes. Top with mini marshmallows and nuts and return to oven for about 10 minutes for marshmallows to brown and nuts to toast.
7. Let rest for 10 minutes, drizzle with a little maple syrup, and serve.
Homestyle Stuffed Pork Chop
Ingredients:
Leftover traditional bread or cornbread stuffing
Center-cut pork loin chops- cut about 1 1/2 inches thick (ask your butcher to cut a pocket for stuffing into them)
salt & pepper
paprika
dry white wine such as Chablis
Leftover gravy or herb butter
Method:
1. Preheat oven to 350 degrees
2. Being careful while handling raw pork, stuff a good amount of stuffing in the pocket of each chop.
3. Season all sides with salt, pepper, and paprika. (*If you have lots of leftovers, these will freeze well wrapped individually.)
4. Place on non stick tray or baking dish. Drizzle lightly with white wine.
5. Bake at 350 degrees for 30-45 minutes or until the thickest part of the meat next to the bone has reached an internal temperature of 145 degrees. Use a meat thermometer.
6. Finish with some leftover gravy, herb butter, or any favorite accompaniment.
