Thanksgiving Leftovers: Breakfast Burritos & Turkey and Sweet Potato Quesadillas

Day After Thanksgiving Breakfast Burritos

Ingredients:
4 Eggs
2 C Shredded Turkey                                                                                                                                                               1-2 C Mashed Potatoes
½ C Salsa
2oz. Gravy
¼ C Shredded Cheddar Cheese
4 Flour Tortillas

Instructions:                                                                                                                                                                        Put eggs in skillet to make scrambled eggs
Add pre-heated mashed potatoes, gravy and turkey
Add cheese
Keep stirring so you don't burn the eggs
Heat the tortilla in a skillet
Put some salsa on the tortilla and add the egg mixture
Wrap up and enjoy


Turkey and Sweet Potato Quesadilla with Chipotle Mayo

Ingredients:
2 C Shredded Leftover Turkey
¼ C Salsa
4 Large Flour Tortillas
½ C Sweet Potatoes, mashed
1 C Shredded Cheddar
2 TBSP Canola Oil
½ C Mayonnaise
2 TBSP Sour Cream
1 Lime, Juiced
½ tsp Ground Cumin
Salt and Pepper
1 Green Onion for Garnish

Instructions:                                                                                                                                                                         Oil the tortilla and heat it in the skillet
Add the sweet potato mixture onto half of it
Add turkey, salsa, and cheese.

For the Chipotle Mayo
Mix up the mayonnaise, sour cream, lime (juiced), ground cumin, salt and pepper
Top the quesadillas with the mayo
Enjoy!
