Gourmet spring mix salad, whole wheat penne pasta, grilled Norwegian salmon and fresh green beans with Ottavio Musumeci from Station Square Restaurant
Gourmet Spring Mix Salad:
12 cherry tomatoes
Sliced red onion
Sliced cucumbers
1/2 c olive oil
1/2 c red wine vinegar
Salt and pepper to taste
TOTAL: $4.50
-Mix the vegetables with the salad mix
-Mix up the olive oil and the red wine vinegar
-Pour over the salad and add salt and pepper to taste
Whole Wheat Penne Pasta:
1 lb whole wheat pasta, $2
12 cherry tomatoes, $1
12 asparagus, $2.50
1 oz. basil, 1 oz. garlic, olive oil, $1.50
TOTAL: $7
-Cut the cherry tomatoes and asparagus points.
-Chop the garlic, basil and sauté in 1 cup of olive oil in large pan.
-Boil penne to taste. Retain one cup of pasta water to add to your sauté pan.
-Drain pasta, add pasta to your large pan or fresh, simmering veggies.
-Add salt and pepper to taste.
Grilled Norwegian Salmon:
1 lb. Norwegian Salmon fillet, $8.50
Organic Mediterranean seasonings, $1.00
TOTAL: $9.50
-Cut one pound of salmon into 4 pieces.
-Pour about a half cup of water in a grilling pan.
-Brush with organic Mediterranean seasonings (or your favorite seasonings)
-Put into a preheated over at 375 degrees for 3 to 5 minutes.
-Add salt and pepper to taste.
12 oz. Fresh green beans:
-Saute with a half cup of olive oil, salt and pepper until desired tenderness.
Pineapple:
-Cut length-wise in quarters
