Economy Cookies

From Kimberly Salmen of Kensington

Pre-heat over to 350 degrees

Ingredients:
1/2 c. margarine (or butter) 2 c. flour
3/4 c. sugar 1 tsp baking soda
1 tsp vanilla 2 tsp baking powder
1 egg 1/4 c. Water

Cream margarine, sugar, vanilla and egg together until creamy. Sift together flour, baking soda, and baking powder.
Add dry ingredients to creamed mixture until evenly blended. Dough will be course and dry.
Add exact amount of water. Wrap in plastic and refrigerate overnight or at least 4 hours.
Roll out and cut into shapes with scant amount of dusting flour. Keep dough cool while rolling to keep it firm.
Bake at 350 degrees for 8-10 minutes. Watch carefully, do not over bake.


Frosting
Ingredients:
1 c shortening 4 1/2 c powdered sugar
1 1/2 tsp vanilla 3 to 4 Tbls milk
1/2 tsp almond extract

Beat shortening, vanilla, and extract. Slowly add half of the powdered sugar beating well. Add 2 Tablespoons of milk.
Gradually beat in remaining powdered sugar and enough remaining milk to make of spreading consistency.


These cookies were depression era cookies. The ingredients were chosen because of scarcity and cost.
